Taste and Health Awards 2018

The winners of the 16th edition of the MAAF Taste and Health Award once again won over the jury, made up of food industry professionals and healthcare professionals.

The 2018 podium is finally revealed:

1st prize : Aurélien FOURNIER – Pastry chef in La Voulte sur Rhône (07) with his creation Colors of Ardèche. (a dessert rich in fiber, antioxidants, gluten-free…: chestnut flour, apple, blueberries and honey are the main components.)

2rd prize : Michel COLLIN – Charcutier in Charleville-Mézières (08) with his spread of black pudding with foie gras, rich in iron and minerals, popular with children.

 

3rd prize : Romain LOCUSSOL – Chocolatier in Nantes (44) with his chocolate bar Honey Wellness. Honey well-being made from dark chocolate, 70% Limousin honey, royal jelly and propolis, which comes in the form of a finger.

1 in 5 apprentices in the food sector

According to the study by the CGAD (General Confederation of Retail Food) published in October 2018, out of the 412 apprentice statuses, 75 000 are employed in the local food sector or 1 in 5.

We note a very clear predominance in the professions of bakery-pastry shop-chocolate shop-ice cream shop with 31 apprentices.

Among these apprentices, 79% are preparing a level V diploma, 50% of these apprentices are minors and 1/3 are women.

MOF: Chocolatier Confectioner

For the final, there were 10 of them competing for the title of “One of the Best Craftsmen of France” in the Chocolatier Confectioner class.

MOF: Pastry Chef Confectioner

The laboratories of the Château de Ferrières hosted the Finale One of the Best Craftsmen of France » in class Pastry Chef Confectioner, for 4 days of testing. Wednesday, October 24, 2018 - after a presentation of the pieces open to the public - the results were revealed.

David BRIAND, Patrice IBARBOURE, Jean-Christophe JEANSON, Jonathan MOUGEL and Sébastien TRUDELLE were named “One of the Best Craftsmen in France”

The 11 other finalists gave their best and are also to be congratulated for their fine performance and their commitment: Mathieu BLANDIN, Fabien CARRE, Fabien COCHETEUX, Fabrice DANNIEL, François DAUBINET, Nicolas MUTLON, Jean LACHENAL, Nicolas PACIELLO and Aurélien TROTTIER.
