"Artisanal skills and baguette culture" listed as intangible heritage of humanity by UNESCO

On November 30, 2022, the UNESCO Intergovernmental Committee for the Safeguarding of the Intangible Cultural Heritage, meeting in Rabat, Morocco, for its 17th session, decided to inscribe " artisanal know-how and the culture of baguette bread » on the Representative List of the Intangible Cultural Heritage of Humanity.

International Convention of Modern Bakery

The 5th International Modern Bakery Convention was a resounding success. On November 210, 23 participants came to discuss the commitment and challenges of the bakery, viennoiserie and pastry industry.

French water ice sculpture championship

Le French Water Ice Sculpture Championship took place at the Château de Salles in Vézac on November 12, jointly organized by the Association of French Water Ice Sculptors and the Christian Vabret Boulangerie Pâtisserie Cuisine School.

The theme imposed this year was “The wonderful world of dragons”.

The junior championship was held in the morning and the senior championship in the afternoon. At the end of this day of competition, Miss Kim VIDELO, Junior category and Mr. David ALVES, Senior category, won the title of French Water Ice Sculpture Champion in their respective categories.

1st edition of the MAF Chocolatier Confectioner

The National Confederation of Chocolatiers and Confectioners wished to highlight the elite of the winners of the CAP Chocolatier Confectioner by organizing the first edition of MAF Chocolatier Confectioner.

Mateo Attard

November 8, Mateo Attard, from the University of Trades – CFA of Bayonne, was awarded the title of Best Apprentice of France Chocolatier Confectioner 2022 at the Paris School of Table Professions.

For 7 hours, the 9 finalists – 7 women and 2 men – had to demonstrate unwavering concentration to perform the various required techniques:

  • 2 chocolate making tests;
  • 1 confectionery test;
  • 1 specialty in chocolate or confectionery;
  • 1 commercial montage on “Biodiversity”, the theme of the year;
  • 1 presentation of their entire creation in a “shop window” style.

After 3 days of intense competition around 7 events, 18 candidates demonstrated daring and creativity on the theme " Tomorrow: tastes, looks, feels » during the last Salon du Chocolat in Paris.
