21st MAAF Taste and Health Prize
Thirteen finalists met this Monday, October 13, at the CUISINE MODE D'EMPLOI(S) school in Paris to reproduce the recipes presented: the final of the 16st MAAF Taste and Health Prize was, once again, a great moment of sharing and emotion for taste professionals driven by the desire to offer their customers creations that are as tasty as they are respectful of their health.
In the end, it was an almost exclusively female list that emerged in the 4 categories of the competition (sweet recipes, savory recipes, takeaway recipes and recipes to keep):
Muriel Aublet-Cuvelier, consultant, jury of the French School Cup in Bakery, Viennoiserie, Pâtisserie, culinary advisor on TV, host and creator of the YouTube channel Les Secrets de Muriel, won the prize in the “Sweet Recipe” category. The sparkling pastry chef presented a dessert with autumnal flavors combining nourished chicory, Ardèche chestnuts, Breton buckwheat seeds and Ile de France pears. An eco-responsible approach in line with the expectations of the time, combined with the marked sensitivity of this professional who chose to share her know-how with the general public.
Christelle Ouléa – C'doudeh company, ice cream manufacturer in Lamballe (22), stands out in the “Recipe to keep” category. The sorbet presented combines flavors from here and elsewhere: raspberry and bissap, as a nod to its ties between Brittany and Ivory Coast…
Elena Burlacu, pastry chef in Lingères Sonneville (16), presented a bold approach to pastry… in a takeaway glass, ideal for on-the-go consumption and which earned her a jury's favorite
Noémie Dalissier, in the process of creating his own pastry shop in Meaux (77) had revisited the dessert as a true gastronomic dish: the daring combination of grapefruit and chervil, combined with a carefully prepared dessert-style plate, opened the doors to the jury's second favorite.
Finally Diane Nguyen Thi To Nhu et Anthony Hory won respectively in the Takeaway Recipe and Savory Recipe categories.
