Nominated for Europain 2016, The ganache storage tower is a new feature that is sure to appeal to anyone who works with chocolate.
This tower, which can hold 10 plates, allows ideal storage at 15 to 18°C with a humidity level of 55 to 65%.
With a maximum storage capacity of 60 kg, it draws its originality from its removable frame plates.
With a height of 8, 10 or 12 mm, the plate is placed directly on the work surface so that the ganache is poured into the frames and immediately put in the fridge.
Each plate has 4 frames of 360x360mm.
The work surface of the lathe is covered in granite or stainless steel.
And for practical reasons, the two doors of the tower are opened using a foot pedal.
