Week 1 : « Know your basics » Bread and Viennoiserie Basics : Baguette de tradition française, manual kneading, croissants, Brioche, Rye Bread…

Week 2 :  « Tart up your cake ! » Tarts, Sweet cakes, Petits fours, Macaroon : Tarte citron meringuée, apple tart, tarte tatin, macaroons, coconnut rocks…

Week 3 –  « So choux entremets ! » French pâtisserie (Entremets, choux paste) : Fraisier, black forest, modern entremets, eclairs, Paris Brest, revisited Saint-Honoré…

Week 4 – « Sweet layers O’mine ! » Laminated dough, regional brioche : Croissants, Pains au chocolat (normal and bicolor), danishes, pannetonne, laminated brioche…

Week 5 – « Sourdough all the WAY » Leavened Breads, specially breads : Country bread (decorative shapes), stoneground bread, nordic style bread, buckwheat bread…

Week 6 – « Get your snack ! » Sandwiches, Savourys, sweet snacks :Quiches, savoury cakes, sandwiches, (black vienese dough, hot sandwiches,…), financiers, cannelé de Bordeaux…

Abu Dhabi Worldskills 2017

During Worldskills competition which took place in ABU DHABI from 14 till 19 October 2017 : Damien BESSON, french young baker, won the GOLD MEDAL
This edition saw the return of the Bakery in this international competition.

European Bakery Cup 2017

During Serbotel Nantes , october 22 – 25 , the French Bakery team became Champion of Europe.

2sd = Italian team

3rd = Netherlands team

 

 

MONDIAL DES ARTS SUCRES 2018

Since june 13th, the duet which will represent France is finally revealed. The duet will try to obtain the title of World Champion of confectionary arts during EUROPAIN 2018.
